A good complex carb for slow digesting good more sustained energy, along with a fairly quick digesting protein source so it will be available when needed. Fish is a good choice, eggwhites, etc. For carbs, brown rice, oatmeal are good choices.

Would scrambeled eggs be alright with an apple?

Well, yes, but a good complex carb source would be ideal for sustained energy. You need carbs before training, this is your "fuel" so you don't hit that wall too soon.

What about protein bars? I workout right after work so it is impossible for me to prepare any type of meal. I've been eating a trail mix bar and fruit around 3:00 PM with my workout at 5:15-5:30, but I know I should change this, just dont know to what.

I usually eat rice or cereal before a workout.
