Lemon Dill Chicken
Marinate 4 boneless skinless chicken breasts overnight in:
1 lemon squeeze and sliced (use all of it)
2 cloves minced garlic
2tbs evoo(extra virgin olive oil)
2tbs white wine vinegar
2tbs dijon mustard
2 sprigs fresh dill
Bake in a 350 degree oven for 30 minutes after applying a fresh drizzle of olive oil, fresh sprigs of dill, and a slice of lemon on top of each breast.
Serve with fresh corn on the cob and a nice spinach and greens salad!

That sounds absolutely d e l i c i o u s! I love anything lemon when cooking! I will add it to my things to try! I think chicken is the easiest thing to spruce up to taste good just have to find the right combinations such as this!

Here's another one, this one we actually had last night.
Fresh Italian (doesn't have a real name)
1 box whole wheat penne pasta
3 handfuls fresh baby spinach
1 cup baby grape tomatoes (halved or quatered depending on size, then nuked for 20 seconds)
2tbs butter or evoo (whichever you prefer)
1 cloved minced garlic
crumbled feta cheese
Cook your pasta, and right before it is done, put evoo and garlic into sautee pan. Heat until oil is nice and hot, but don't let your garlic burn! If you are using butter, brown it slightly until it gets nutty smelling!
Next add in your tomatoes, spinach and cooked pasta. Toss these together until spinach JUST BARELY starts to wilt.
Put a few(and I mean a few) crumbles of feta cheese in and toss until they start to melt just a bit (a little of this stuff goes a LONG way)
Sprinkle pepper on top and plate. Serve with a nice big green salad and iced tea with lemon. Yum!

they both sound tasty - add some chunks of chicken breast or some other lean protein to that pasta dish!

yum, hadn't thought about adding chicken to that, but yum, grilled chicken on top would be even yummier and better for me too! Good catch Amy!

well....grape tomatoes tend to be around the size of a quarter, baby grapes are anywhere from the size of a nickle to a dime. They are SMALL. If you wanted to use regular grape tomatoes, you would just need to quarted them and you should be good.
