I work out 5 days a wekk as per the FT schedule i am on
monday -shoulder forearms abs
tuesday- legs
wednesday -chest
thursday -rest
friday - back calves
saturday -bi's tri's abs
I am starting to gain weight not much but since starting in mid november i have gained 7 pounds , my arms are a little bigger and i am noticing more definiton in my shoulders and chest
But now i still want to continue to gain weight in muscle but will cardio defeat the purpose? and when should i do cardio? if i do it on my off days then that means i workout everyday? and isn't that bad?
if i walk 8 miles on lets say my days off is that bad?

No, you can do cardio on your days off from weight training. Listen to your body, if you feel tired one day then take a day off.
Even when you are bulking you'll need a little cardio (except for certain cases!) 3 times 20-30 minutes would be enough.

If possible separate your cardio and workouts by 6-8 hours. Say, cardio-morning, weights-evening. If not do cardio last.

I prefer to do my cardio on off days as Philia2 says, but i didn't know you could seperate it 6-8 hours. But if i do it after wouldn't that cut in between the time i have to take my protein after lifting weights?
or is it that i take my protein after the full workout and the time doing cardio counts as the workout?
because i thought you had to take your protein between half an hour after lifting

You want your recovery drink to be of maximum benefit. This would be immediately post workout. This will serve to shut off catabolism, and put you from a catabolic state to an anabolic state. Then have a balanced meal. You will have another if you separate 6-8 hrs., so you will be nourishing your body from the workout and getting some benefit from it. Then go do your fat burning cardio, and follow that up with protein and fats and fiber. This will keep the fat burning "wave" going(as fats have no impact on blood sugars). This is best if you have to do them the same day. Opposited days are even better, as you will get more recovery time from your weight workouts. Any way it goes, you NEED that recovery drink to go to recovery after a hard weight training session. Doing cardio immediately folllowing will negate any gains you could make and the worth of your drink and further prolong a catabolic state. More detrimental than anything other than pure weight loss.(muscle and fat)

One last thing to add, if you are a hardgainer or you feel that it is hard for you to gain weight, and that is your goal, then I would suggest limiting your cardio as this is self-defeating.
