My ft program has me working out on monday and thursday each week, because of my work it would be best to train on saturday and sunday.
Is it ok to have my work out days together? Would I risk overtraining some muscles even though I wouldn't be training the same muscle group each day?

You may be a little sore the next day, but if you can manage it and it the best for you, go for it. If you are resting the remainder of the week, you should be good to go.

workout#1 chest,shoulders,tricepts and abs
workout#2 back,bicepts,legs,calves
Can good gains be made working body parts only once a week?

Absolutely. That is all most of us do. Depending on your split/routine, it may be all that is possible. Remember, as crazy as it seems you only grow when you are resting.
