I tried to post this before but I don't think it went through. If this pops up twice please excuse me.
Having completed a 12-week weight training program I am taking this week off from weight training to let my body rest. As far as aerobics go, should I increase, decrease or leave the same the amount of aerobics I do? What about diet. Should I eat more, less or the same, and in particular, what about the amount of protein I eat? Thanks.

What are your goals? Gaining or cutting or a sport? There's really no clear cut formula for what to do on off weeks, but I generally reduce cardio slightly and eat at maintenence levels.

Active rest is good for the week off. You don't have to be a total slug, but stay away from the weights, may do some light cardio. I would not increase your cardio. Keep your diet up, whatever you do, if you sluff off now on your diet you will pay! You grow outside the gym. This week is meant to rest and nourish your muscular system, nerve endings, ligaments, joints, etc. Nutrition is a must during this week. You should most likely gain while you are off. Good luck.
