Eventually you are going to reach apoint where you don't have enough resistance - the more sets/reps you add will build muscle endurance, but that doesn't always translate to size. Look a t guys who go through boot camp, for example -they may get fitter and more muscular than they were originally, but they don't usually get really big because they are working more endurance type training, lots of reps and lots of running.
