Yes, they will greatly help your insulin sensitivity also. Try not to do carrots too much, dark green veggies are your best bet.

I was always told, only eat during your meals, and not inbetween, as it helps spark the Metabolism more..??

Well, it is key to try to make your meals so you don't have to snack, but if you do, veggies are not bad. A good option is also snacks of the fatty variety, like an oz. of walnuts. The reason being no impact on blood sugars.:cool:
