Starting Weight

I'm brand new and haven't yet started. My question is involving the suggested weights for novice trainers. I am about 5'8" and 190lbs, but reasonably athletic. How can I know what is an appropriate weight to lift with each exercise?

It's very individual and based on your strength level. What you need to do is experiment a bit. Start with something light and see how it feels, to light, increase the wt. Generally, you should be able to get through all of the sets and repititions, but it should feel pretty tough to get through the last few. Better to start light and get your form correct before moving on to heavier wts. You'll likely use different wts for different exercises as small muscle (i.e. tricepts) groups will be weaker than big muscle groups (quads).
