Today, I thought I would cook some chicken breast so it would be ready for tomorrow. Once I got started, I couldn't stop. I just kept adding things until I had soup! Ok, so this comes out sort of like a stew versus a soup. :)
I wanted to see everyone's thoughts on how healthy it is.

Finely chopped 1 clove garlic, 1 whole sweet onion, 1 whole red bell pepper, 1 jalapeno & 2 stalks celery in a tbsp extra virgin olive oil. Sauteed 3 chicken breasts(seasoned with coarse cracked black pepper) in 1 tbsp extra virgin olive oil. Cooked 2/3 cup natural wild rice in water. Once everything was done, I put it all in the same pot with the rice and added a can of kidney beans, an 8oz can of 99% fat free chicken broth, and a cup of water.

It tastes pretty good, and it smells great. Noirutla HATES onions and peppers, and he is even liking it. LOL! I'm hoping it is healthy and all of the right kinds of protiens, carbs, and fats!

Made me pretty dam hungry!! Sounds great to me! Quality meal, with great spices(jalepeno), and even good fats with the olive oil.

It IS good! Thanks for the feedback! I'm glad to see I didn't screw my diet up by making it and eating it. YAY!
