I couldn't figure out which post to add this to.

This is my new Survivor night pizza - it is pretty good! especially with some lemon/limeade!

1 LaTortilla factory Lowcarb tortilla
1/4c traditional ragu with meat
1/3c soy crumbles, morningstar farms grillers
1/4c fat free shredded cheddar

Preheat oevn to 425. Spray a cookie sheet with cooking spray, place tortilla on it and lightly spray the tortilla.

Bake, turning once, until slightly crispy.

Spread on ragu, soy crumbles and cheese. bake 5-8 minutes, until melted and hot through.

here is a 'pizza' recipe i have tried and liked

Healthy Mexican Pizza

2 low-carb tortillas
1/2c refried black beans
1/2c cottage cheese
2/3soy crumbles or lean beef, crumbled, cooked
1 oz soy mozarella, or reg mozarella, shredded.

pre-toast the tortillas in the broiler to crisp them (careful, they burn!)
mix the beans and cottage cheese together, then divide evenly on the tortillas, spread as close as you can to the edge - it will keep the edges from burning (personal experience:angry
top each with 1/3c soy crumbles and sprinkle with the shredded cheese.
Broil until warm and cheese is melted. Top with salsa if desired.

This recipe is in my food posting, and I just wrote it from memory, but i think it is right.

I have also made mt daughter pizza on the low-carb tortillas, she likes them a lot, I spread them with a little ragu sauce and use the soy crumbles, but she likes real cheese.


Here is the original recipe:

1 low-carb or gluten free wrap (I used 2 small Misiion brand low-carb tortillas)
1/2c 2% cottage cheese
1/2c black bean paste or fat-free refried black beans
2/3c soy crumbles
1 oz shredded soy cheese
salsa, to taste

Makes 1 serving
410 calories, 39g protein, 41g CHO, 8g fat, 15g fiber

Jennie-o makes a good turkey italian sausage in either sweet or spicy - both make good pizza.

I like portabella mushrooms, garlic, anchovies and green olives on my pizza :) Good fats and nutrients :)

Here is a really good pizza crust recipe I found in Oxygen magazine: I made it and really liked it. it says it makes a 12 inch pizza, but a real pro can stretch and push the dough out to 16 inches :)

Whole wheat and flax meal Pizza dough
2 1/4c whole wheat flour
1/4 flax meal
1 tsp instant rise yeast
1 tsp sugar
1 tsp salt
1c warm water (100-110 degrees farenheit)
1 tbsp extra-virgin olive oil (I used Enova oil because it was what I had on hand)

In a large mixing bowl combine flour, flax meal, yeast, sugar and salt. Stir in water and oil with a wooden spoon. When the dough starts to hold together, remove from bowl and knead dough by hand for 8 minutes (or use a standing mixer with a dough hook) it is sticky - either flour or oil your hands. Shape dough into a ball, return to bowl. Cover with plastic wrap and let rise for an hour in a warm spot (70-80 degrees F).
Before baking, remove dough and knead for 5-6 minutes, then shape.

Here is a recipe using this crust:

Shrimp and Pesto Pizza Makes 8 slices
non-stick cooking spray
1 recipe wholewheat/flax crust
1/4c reduced fat pesto
6 oz large shrinp, peeled and deveined (approximately 20-24 shrinp)
1/2 medium red bell pepper, sliced

Preheat oven to 450 degrees farenheit. Set baking rack in top third of oven.
Lightly spray a baking sheet (or pizza pan) with nonstick spary. Shape dough into a 12-inch (we talked about this, go for a 16 incher :) ) circle on prepared pan. Spread pesto over top, top with shrimp and bell pepper. Bake for 12-15 minutes. cut into 8 slices and serve.
