I was wondering can you do to much cardio, should you take a break or would it be alright to do cardio for 7 days a week but take time off of weights

Take time off. I just made a post I will repeat here. Too Much Cardio can Teach Your Body to Store Fat! Dr. Serrano, MD, a highly respected protein doctor and bodybuilding specialist, among other countless atheletes, says this. the body will learn to store fat in ceratin areas if repetitive cardio work is done for long durations. He explained in serveral seminars the the body will improve its ability to store fat as a part of a naturaly survival mechanism. The bodies main focus is on survival, not losing bodyfat as a priority. Your body will produce catabolic hormones such as cortisol to maintain ad add bodyfat in a desperate situation such as starvation. Typically long durations of repetitive exercise goes hand in hand with starvation states such as being stuck in thick jungles or endless deserts. You are forced to walk or run long distnaces in theser situations and the body must slow fat loss to a grinding halt by raising stress hormones to preserve life. I would do at best every other day, and mix it up, like one day HIIT and the next time a standard session.
