Hello, I'm kind of new to this so here we go. I am 5'11 and weight about 175. I am looking to drop down to about 165 and just get in better shape overall. I was wondering if riding the bike, doing push ups and sit ups and the occasional things on a bowflex would help me accomplish my goal. I know that everyone will say stuff about the diet but I eat well and try to stay away from junk food, and the only real carbs I eat come from bread, just for lunch.

i think cardio and weights are best and you have to be working out atleast 5 times a week. you say you eat heathly yet arent slim yet so maybe there are things you can tweak just a little bit more and make sure your not starving your body as that can have the opposite affect to what you want.

You need carbs. Carbs are not bad. Your body needs them. Just eat the good ones, vegetables, whole wheat breads, oats, etc.

Biking and the exercises you state are a good place to start. Give those a shot for a few weeks and see where you are. If you're not seeing the results you want it comes down to either you need a new exercise plan or as you said....your diet.
