I've eaten these frozen TVP burgers, and, one of them, for example, says it has 9 grams of fat- 1 saturated, 4 monounsaturated and 4 polyunsaturated. I figure that's pretty good, but what do I know? What's the difference between polyunsaturated and monounsaturated fats and are they always beneficial?

yes, they are fine, as long as the fats fit into your calorie scheme.
