I used to work out every week day, but recently I just don't have enough time. I work four days a week, but am also at uni for 15 hours a week. I also do evening classes twice a week. Basically I can now only make it to the gym twice a week. Is this enough - has anyone else had good results with a twice weekly workout?

Whilst 2 days a week may not be ideal, it is way better than no days a week. It may also only help in maintaining your current level of fitness.
Have a look on this site for home excersises,
You could do some skipping, push-ups, sit-ups, dips etc whenever you have a spare 30 minutes or so at home, when you get up, just before bed or whenever you have time.
Do a search on this site, I'm sure they have home workouts which may help you with this matter.

get up 1/2 an hour earlier and do calisthenics or cardioo at home. It will give you energy and supplement the two days you can get to the gym.

Thanks for the suggestions. Yes, I'll fit in some home exercises and cardio where I can. (Hmm, think I have a step machine and rebounder gathering dust somewhere!) BTW what are calisthenics - is it like pilates/yoga?

No, calisthenics are body weight exercises, like push-ups, jumping kacks, mountain climbers, dips. Things you can do to build and tonemuscles at home without weight equipment.
