My Nutrional plan says I need 30 grams of fat. I was wondering if it would be ok to have 40 grams instead. I dont eat anything fatty but with my diet my total fat doesnt equal 30. Another thing I would like to know is how many grams of saturated fat should i have if consuming that much fat?

It will be fine. Try to make them EFA's. Like flax oil or fish oil for example. Sometimes it is difficult to get right on the button on the numbers, but if you are close enough, you will more than likely be fine. If you are not overdoing the carbs for instance, a bit more healthy fats can/will be very good for you.
