If fat burning is your major goal, which I assume it is, I like to opt for protein/healthy fats. This has little to no impact on blood sugars, thus no insulin response. So it will nourish your muscles without any chance of insulin spiking, and this will help to keep glucagon(fat burning hormone) and a relative lack of insulin intact.
If you choose to eat carbs, make them highly fibrous, such as cooked dry beans, etc with your protien.
