I have a rather slim build, and I'd like to stay that way. However, I'd like to have a more defined upper body, as opposed to bulging muscles.. I don't have access to machines or weights. Any suggestions?

pressups, pullups, situps, dips will all give you a degree of defenition to start you off but you will eventually have to turn to weights as these exersizes will get easier and less efective.
And this something to think about just a little creative input, I am your height with about your bicep and waist maybe a little bigger but I weigh about 126..... you don't really want any definition at your size you won't really see it... I know because I have to buy shirts out of the child sections and get a large child shirt... I'm bulking up so I don't have to keep doing that but hey whatever floats your boat... it wouldn't hurt to be a bit bigger...
