I think its that in a situp you actually raise your torso all the way up to where your chest is near your knees.. here are some examples i found...
http://www.cbass.com/HardestSitup.htm
http://www.biostretch.com/abdominal.htm

While a crunch you just come up a little bit making a slight angle between the floor and your back until you feel a 'crunch' in your abs and stop there for a second then lower yourself back down to the start.. ft has an example if you goto muscle targeting then abdominals.
Here is an all right example but I wouldn't roll my head back as far as this guy..

crunches are better for your back than doing sit-ups. You also get a better result.

Just don't depend on crunches for your whole ab workout. They're the best exercise for your upper and middle abs, and if I had to pick only one ab exercise to do it would be the crunch. BUT...they do almost nothing for your lower abs or obliques. Tossing in some reverse cruches and twist crunches makes sure you're hitting the entire midsection.

This site has a great selection and explanation of ab routines, just go to Exercise Resources/Muscle Targeting/Abs and Obliques

I also really like the following site for muscle group and exercise descriptions. Just go to the link and click on abs.
