I've read this term a few times, but what constitutes a clean diet? Fish, Chicken, grilled red meats, fruits and vegetables?...Whole Grains? Also, I've heard a couple of people mention a 3000-3500 calorie diet? Isn't that too much?

Your caloric needs will be detrmined by your weight, your goals and your expenditure. Some people do need that many calories.
A clean diet is one that includes a wide variety of fresh foods - whole grains, fruits, vegetables, lean proteins, legumes, good fats from nuts and seeds...a diet full of nutrients, sufficient fiber and as little processed/refined foods as possible.
There is alot of info on this topic in the nutrition forum - start with the grocery list for healthy eating.:)
