I am a 46 year old male who was in top physical shape in High School trying to get back into shape. I did my profile and got my exercise program. My question is how much time do I spend between reps and different exercises? I?d appreciate any help you can give.

Generally about a minute should do it between sets. welcome here.

it depends on the intensity of the sets also.

Pensfan is correct. If you are doing max weight each set, or taking each set to endurance failure mode, you may well need added rest time. However, research I have seen seems to indicate that longer than 3 minutes really does little good for the next set. If you are going heavy, the idea is to be able to recruit maximum muscle fiber for your next set, or obviously, your next set will suffer weight wise.
For muscular endurance, then of course rest no longer than a minute, and try to keep decreasing your rest periods for advancement in endurance.

ok then which builds more muscle taking short 1 minute breaks or longer 2-3 minute breaks? which builds more strength?

If you read my post you will note that it says for muscular endurance the rest time is a minute or less. It also says that to recruit the most muscle fibers(this would imply for strength which normally relates to size), a longer rest period, up to 3 minutes.
For any workout type, whether muscular endurance or strength/size, diet is essential as the workout is simply the catalyst.
