As I've been reading the boards I've noticed alot of peeps comment about making time for breakfast. My husband and I came up with a fun way to have breakfast ready every morning and all we have to do is nuke it for 30 seconds. We make egg and saucage (or bacon) "breakfast burritos" on the weekends and clingwrap them individually for easy on the go breakfasts, just grab and go. Basicly just brown your saucage like you would ground beef, scramble the eggs and season to taste, then wrap in soft taco shells (the burrito size shells tend to be abit too big for breakfast portions) and wrap in clingwrap to throw in the fridge. Enough for 2 peeps for a whole week tends to take 2lbs of saucage and 2 dozen eggs. They also make a great afternoon snack if you are craving some protien.

I find that the key to eating properly is pre-preparation such as you have alluded to. My kitchen sees alot of activity on Saturday and Sunday. That does sound pretty tasty. I'm always looking for new and easy recipes for eggs.
