Diet- the hardest part?

I've just started a nutrition and workout program and by far, the diet is the most difficult part. NOT because I am tempted by junk food etc, but because I am trying to gain weight. It is reccomended that I eat more than 1500 calories, 130g of protein and 75g of fat.
I struggle SOOOO much to get anywhere near these figures :(:(:(. I can't afford supplements etc so I eat quite a bit of Tuna EVERY DAY! I don't really know what DECENT foods will help me reach the 75g fat target and calories are boosted by the occasional bowl of cereal.
Anyone got any tips?? oh and what is Myoplex/flaxeed oil???

I don't want to discourage you more, but 1500 calories seems really low if you are trying to gain weight. I'm losing, and I am taking in 1800 a day with 200g protein, 150g carb, and 50g fat. I have a hard time getting 50g fat in, so I could only imagine trying to get 75 in.

Protein foods:
Tuna
Salmon
Chicken Breast
Lean Beef
Fat Free Cottage Cheese
Fat Free Cheese
Fat Free Milk
Fat Free Yogurt
Egg Whites
Beans (Kidney, Black, Lima, Soy)
Whey

Carb Foods:
Old Fashioned Oatmeal
Brown Rice
Wild Rice
Oat Bran
Whole Grain Bread
Beans (Kidney, Black, Lima, Soy)
Fruit(Strawberries, Apples, Peaches, White Grapefruit)
Spinach
Greens
Broccoli

Fats:
Sunflower Seeds
Walnuts
All Natural Peanut Butter(also a protein)
Olive Oil
Flaxsed Oil

Flaxseed Oil is made from flax seeds. I believe it includes omega 3 fatty acids, which are the good kind of fats. The Salmon will also add a bit of good fat. I believe the beans will too. Adding an occassional yolk to the egg whites will put some fat back in there too...plus important enzymes.

It takes time playing around with different foods, but once you start paying attention to nutritional values it will start to come easy to you to meet your needs.

eggs are cheap. oatmeal is cheap, bulk brown rice is cheap.
Going to the doctor because you are suffering from a lifestyle related disease that could have been prevented by spending a little more on healthy foods and a gym membership - very expensive.
Keep it up, and up your calories!
