This is my training schedule:

Mon: Yoga
Tues: 1 hr interval training including full body strength training
Wed: Rest
Thurs: ft upper body 1
Fri: ft upper body 2
Sat: ft lower body
Sun: Rest

I also do 3-5 30 minute cardio segments throughout the week. Do you think I'm doing too much strength training?

If you are use to it and feel good then I cannot see a problem. You still got two rest days.
