Main thing is to watch your daily fat intake. Tatal fat should not exceed 65-80g's Saturated fat is the worst-like bacon grease, hotdogs, cheese, cookies, donuts, taco bell, micky dees burgers, 20-25g's daily is the limit for the bad fats. The better fat comes from nuts, grains, cereals, some breads.

Olive oils and canola oils are good fats too, as well as fish oils.

You want fats that are high in EFA's. This is what makes a fat a good fat. It can actually help you burn fat also. Omega 3's are what you are after, and as metraa says, fish oils are essential. Cold water fish, such as salmon are extrememly high in your good fats. Olive oil is great to cook in, high in monosaturated fats, which are reknowned for changing your cholesterol ratio of good to bad(HDL to LDL). If you would like some good reading, go to www.barleans.com, they make a great flax oil, and they have a ton of excellent info on EFA's.
