Weight Loss ---HELP!!!!!

Hello everyone, I am looking for some advice on losing weight. I know that it is a steady process, and it takes time. I have been working on this for the last week, I have changed my diet, changed my exercise routine(started should I say), and really been targetting the muscles that have stored the most fat(Abs, and my man boobs). Over the last week have dropped from 322 lbs to 309 lbs, but I am afraid that I am not doing something right. Here is my schedule.
Breakfast - Meal Replacement from MET-Rx
Snack - 4 oz of pork or Hard Boiled Eggs(no yokes), maybe some sugar free jello. Generally something low in carb count.
Lunch - Salad, or Tuna, with fruit(strawberries, melon)
Snack - Sugar free jell-o maybe a few carrots
Dinner - Contains NO carbs or atleast very few.
ALSO, Approx. 1 Gallon of water through out the day

I only have time to hit the gym at night and here is my routine.

Treadmill weight loss program for 40 mins
Then hit the weights according to what freetrainers prescribes.
Then I will lay in the sauna to make sure I get a good stretch before I go to bed.

I AM WILLING TO LISTEN TO ANY ADVICE THAT SOMEONE OFFERS, and I AM VERY DEDICATED TO THE PROCESS. I HAVE A PERSONAL GOAL THAT I REALLY WANT TO ACCOMPLISH.
