Help-early routine for season cutting...

About six months ago, I was in a cutting phase to no avail. I figured one of the reasons I wasn't able to get rid of the last few pound of fat was because I was practiced low carb diet usually, so cutting carbs was no shock to my body. Thus, i decided to shock my system by eating carbs any time all the time (whole wheat, juice etc.) and try to bulk up. I'm not sure if I added any muscle, I know I gained some strength, and put on some fat.

In about a month or two, i plan on going on a cutting diet to show my abs for the Spring/Summer season. I'm trying to get an idea of what I'm going to do. I know it will involve increased cardio, but as it pertais to diet, I don't know what approach to take.
Should I cut all carbs? Should I eat only carbs in the morning? How many carbs should I aim for (I'm 6'2, 200, between 17-20% bodyfat)? I really don't want to lose muscle, so I'm trying to get my routine down early.

I'm very paranoid about either not being able to shed the last few ab-revealing pounds, becuase Ive hasd trouble with it in the past. I'm also very paranoid about losing too much weight.

This whole diet thing is the eqution that I can't get down pat, which is why I want to get it down pat before I go into training.

I really don't get the whole thing. I need calories, and carbs to prevent from losing muscle. But, i can't really have carbs because it stores as energy. For the last few Ive read even fruit and some vegetables being banned from cutting phases, which leaves me thinking "what the hell am I going to eat to maintain my muscle?" I can't eat 2000 calories of tuna and chicken breast everyday. I've tried it, it's horrible. I can't shove it down my mouth. I'm really at a loss.
