nope, I think it is a precursor to cheese curds in the cheese-making process.
I know how to make the soft cheese, paneer. I would gues the nutritional make-up is similar, except for the whey liquid that floats at the top of cottage cheese.

Wow, I actually do have instructions to make cottage cheese in the LLL cookbook, Whole Foods For the Whole Family, never tried it, though...
"Cottage cheese is made from milk which has stood until it has soured and formed a solid curd. If you are able to use untreated or raw milk, simply stand the container of milk, loosely covered in a dark place at about 75 degrees for one or two days or until set. If you use pasteurized milk, starter must be added. Cultured buttermilk or yogurt that is known to contain an active culture may be used; add 1 T per quart of milk. Cottage cheese curd may also be formed by using a junket rennet tablet. Plain junket tablets are now rarely available in grocery stores but may be obtained from a pharmacy. Only pasteurized or raw milk may be used with junket. Boiled, canned or longlife milk cannot be used, as high heat has reduced the soluability of the calcium upon which the action of the rennet depends.
After the milk has set, either by the action of rennet or by natural acid formation (natural souring), heat it slowly, stirring frequently, to about 120 degrees. Pour off the whey through a cheesecloth. The curds of commercial cottage cheese are then washed and cream or thickened milk added. This step is unnecessary and somewhat wasteful. You need only drain the curds, adding a little salt if desired."

OMG my grandmother used to make cottage cheese when I was a kid and it was gross! Whatever it was she started with ended up wrapped in cheesecloth (a really thin fabric)and could be found hanging from the clothesline for a few days.
