What is happening when jogging and then you get this like acidic saliva and want to spit a lot? Am I overdoing it?

It could just be regurgitation. The acid in your stomach is coming up. Gaviscon might help.

For the past 4 weeks I've just started back running again. For the past year, I've been running about 2 miles once a week (on average.) Now I'm consistently running 10 to 17 miles a week. For about a week or so I've noticed my spit being excessively acidic. The main changes that I've incorporated into my life over the past 4 weeks are:
1) Running again: 10 to 15 miles per week
2) Green tea: 15 drinks per week
3) Hershey chocolate candy bar (an addiction) 12 per week
4) slight cut back in coffee. Down to 2 cups a day.
Other than that, not much of a change. I've also been drinking coffee consistently for about 3 years now. I was drinking coffee 4 cups a day (some in morning and some in the afternoon.) Now I'm just drinking 1 to 3 in the morning and that's it.

Needing to spit is not uncommon for some runners, as you probably know.
Given the acidity of what you are reporting, I would look into what (and when) you are drinking real closely. I have pretty bad heart burn and Tea and Coffee are definitely acidic and will "stay" with me for hours. I'm hooked, but I pay the price for drinking them.
Exercising can excerbate the problem by causing to your stomach to contract.
As mmaibohm recommends some Gaviscon may help or better yet, something OTC with Ranitidine in it.

Could you be running too soon after food. I have read that you should wait an hour after you eat to do cardio exercise, and two hours if the meal is really big.
