Metabolism question

I recently actually counted how many calories i eat a day and realized I'm only eating about 1300-1500 a day because I am so busy (I've been doing this for about a month or so now). Given my activity level I should be getting somewhere in the 2500-2800 range. I figure that my metabolism has obviously slowed a lot because I eat so little. Now that I realize I should try to eat a lot more, should I immediately start doubling my caloric intake every day or should I build up to it? I feel like my metabolism may not speed up to a normal rate if I suddenly double my intake.

Work your way up. A quick jump like that can result in some fat gain.

Thanks for the response, that pretty much reassures my thoughts as well. I'm a guy, 22, been working out for 3 or 4 years pretty much to stay in the best shape I can. I also cycle and swim regularly.
