I'm currently in high school and on school holidays, 2 weeks left, so my question is; should i start off with a 5-day a week fitness program for the next 2 weeks or start off with a 3 day a week program, which is what i'd be doing when school starts?

I would go with the 3 day work out and add in what ever you want until school starts. No changes will have to be made to your program that way.
