Suggestions for proper calorie counting

I recently had a thorough medical fitness assessment where my daily (estimated) calorie intake, bf %, hydration levels, etc were calculated. My stats were pretty decent: 5'5, 111lbs & 13% bf (female!), however my calorie intake was averaged at about 1300. My goal is muscle strength increase, so obviously this is counter-productive and I need to be at least* at 1750. I thought I was averaging about 1800-2000!!!

Are there kitchen gadgets/scales that can accurately determine sizes/calories?? I know the obvious answer is to calculate every tiny little calorie that I put in me, however I know that can lead to disordered eating tendancies and I'd prefer to avoid it.

Are you eating 5-6 times a day? Sometimes a supplement is needed when you can't eat that many calories, but the calories from whole foods are much more better regarding taste etc.

There is a kitchen scale from Escali with 999 different foods programmed into memory, and it measures calories and other things as well. I don't know wher you can find one, but my old boss was selling them for a while here in Sweden. They have a memory so you can add together the nutritions for a day, a week, or even a month. My biggest problem with it was to translate all the 999 different foods into theri Swedish counterparts.
