Strange schedule....diet help

I have a strange day two days per week and need some help making sure I am eating enough.

-I wake up at 530, shower, drink 2c of milk and head off to work.
-At 730 I eat 2-3 hardboiled eggs and 1-1.5c oats.
-Snack of some walnuts or nat PB around 930 or 10.
-I'll eat lunch around 12-1ish. Some pasta, or a large sandwich, regular sized lunch.
-230 Protein shake - 2 scoops protein
-330 Peanuts or walnuts.

Here's where the strange part begins. On Monday and Tuesday I leave work around 420 or so. I drive home and have time to change and head to the gym, get there around 515. Leave around 615 From the gym I head back home and change and head to class which starts at 655.

Class gets over at 935, I'm home by 10 and try to be in bed by 11 so I can be back up by 530 the next day.

My problem on these days lies between about 230 and 11pm.

I need some meals here, not just large snacks. But I don't know where to start what to do. Not much room for a microwave, but since I stop by home that really opens some options for after gym/before class eating.

I'm not looking for specific foods here, just advice...like a larger meal before leaving work, then a protein shake right after workout (but what about eating after workout?).....should I just eat a bunch when I get home, right before I go to bed?

Pack a lunch. Stop by a store and use their microwave... or pack things that can be eaten cold... chicken breast... turkey burgers.. sliced beef... it all works just have to take the time to do it.
