Halibut w/ Asparagus, Tomato & Rosemary

Ingredients:
1 pound of fresh asparagus
1 1/2 cups cherry or grape tomatoes, halved
2-3 sprigs fresh rosemary
4 6-ounce halibut fillets
1 tbsp extra-virgin olive oil
Juice of 1 lemon
Freshly ground black pepper

Preparation:
Preheat oven to 400 degrees. Break woody ends off asparagus and lay stems in dish. Scatter cherry tomato halves on top. Lay rosemary sprigs on top. Place halibut fillets on bed of vegetables. Combine olive oil and lemon juice and drizzle over halibut. Sprinkle with black pepper, and roast uncovered for 18-20 minutes, until fish flakes with a fork.
Serve with quinoa, couscous or whole grain rice.

Serves 4.

Asian Glazed Halibut

Ingredients:
4 4-6-ounce halibut fillets
1 1/2 cups mixed vegetables (julienned zucchini and carrots, broccoli florets)
2 tsp fresh grated ginger
2 tbsp rice vinegar
2 tsp sesame oil

Preparation:
Preheat oven to 450 degrees. Tear off 4 sheets of foil wrap, 12 inches by 18 inches each. Place halibut fillets in center of foil sheets. Top with vegetables. Combine ginger, vinegar and oil in a small bowl. Drizzle a little over each fish and vegetable mound. Close the foil packets by bringing the sides up and folding the edge over twice, then sealing the ends in the same way. Leave enough room inside for air to circulate. Place foil packets on a large cookie sheet and bake for 15-18 minutes. Serve with steamed whole grain rice.

Lemon Soy Halibut

Ingredients:
Juice and chopped zest of 1 lemon
3 tbsp reduced sodium soy sauce
1 garlic clove, crushed
4 scallions, chopped
4 6-ounce halibut fillets
fresh parsley and lemon slices to garnish

Preparation:
Preheat oven to 450 degrees.
Coat a large non-reactive baking dish with nonstick cooking spray.

Combine lemon juice, zest, soy sauce, garlic and scallions in a small bowl.

Place halibut fillets in baking dish and pour lemon-soy sauce over them.

Marinate for 10-15 minutes if you have time.
Bake for 10-12 minutes, depending on thickness of fish. Generally allow 10-12 minutes per inch. Bake for less time if the fillets are relatively thin.

Serves 4.
