Zucchini Quiche anyone?

Just thought I'd share this recipe.

6 egg whites
1 zucchini shredded
1 each onion, red pepper, green pepper
1/2 cup corn
1/4 cup reduced fat cheese
basil, pepper, garlic powder to taste

Cut the onion & peppers into bite size pieces and saute w/ a little water until soft.
Combine all ingredients into a bowl. Spray Pam into an 8 x 8 inch baking pan. Pour egg mixture into pan, sprinkle w/ paprika and spray lightly w/ Pam. Bake at 350* for about 40 minutes until golden brown.
Makes 4 servings...77 cal/1g fat/10g carb/3g fiber/8g protein.

AND the very best thing is that it doesn't have any milk or cream in it.

Sounds very good. I will have to make this when I go home. I am going to have fun getting all these nutritious recipes off the site. I will have my own FT cookbook.

Zucchini is a vegetable. It's in the Squash family.

Don't like squash, but I think zucchini is preety good.
