I just read about Bill Clinton having his arteries 90% clogged and started thinking. I'm 24 now, not overweight, and I eat relatively healthy. I rarely eat red meat, I try and avoid chicken skin, trans fats, white bread etc. I eat natural peanut butter, olive oil and smart balance on a consistent basis. Now, my concern is how to undo any damage that I may have already done. It's only recently that I realized how many products have things like hydrogenated oils in it etc. (I just realized it's in onion soup mix. WTF?!), plus it's not like i've never had a buffalo wing or Snickers before, so I figure my arteries are probably clogged to some degree too. How do we get them unclogged?

Soluble fiber and omega 3 fats - both raise levels of HDL cholesterol which can help prevent/remove LDL cholesterol.

prunes are very good in terms of soluble fiber...as well as apples..and dry fruits ..

Do I get those soluble fibers if i juice my vegetables rather than eat them? For example, I can drink a cup of 4 carrots far before I can eat them!

Soluble fiber has nothing to do with how the food is prepared. Rather, it refers to the fact our body can digest it (normal fiber, or insouble fiber, cannot be digested since we lack the enyzmes needed.)
Oats are a fantastic place for insouble fiber. I wouldn't really recommend cheerios because of how processed/quick to digest they are. Though there are far worse things to eat out there.
