Ok, so I am a big guy, been working out for a good amount of time. I am well aware of the fact you cannot spot reduce, it makes perfect sense to me. I have what can be considered a sizeable gut. Since I know I cannot spot reduce, are there benefits to me doing ab exercises? I mean why build up that muscle when it is completely covered in fat anyhow? Is it more worth my time to continue on with more cardio with the extra time?

Do both, cardio and Abs. Very few people have 6-pack abs, but it is always good to workout the body as a whole and this includes your body's core muscles. Core muscles are very important especially if you play sports. You may not be able to see the muscles, but they will get stronger with exercise, and eventually in time, you will be able to see the muscles. If you can increase your cardio time, do so, but don't over do it...20-40 mins of cardio 3X a week is plenty. It might be a good idea to cut some calories on your diet as well.
