Cut about 300 calories from your maintanace calories. Try and spread your meals out over five or six, try to go no more than 3 hours in between. Also, you could go with a slightly higher proteing diet, taking the calories from the carbohydrates keep your fat roughly the same, or even increase it a little. Like bigandrew said don't eat any junkfood, candy and what not. Your carbos should come from whole grains, and vegetables and other carbos lower on the glycemic index. Make sure you get all of your calcium, which is about 4 serving of dairy a day, whole food is better than supplements. For your heart rate some gyms have a machine that kinda simulates the motion of your arms during swimming, I don't know what it's called but that could do the trick and get your heart rate up.
