Hitting a nutrition brick wall

I've been back on the work-out scene for about 3 weeks now and am running into a snag. ALthough I can start seeing results with my abdomen and the dredded glute, I can't seem to get my nutrition right. I'm having a hard time figuring out how I get my caloric, protien and carb content high enough without having my fat content raise the roof! AAARRRRGGGGGGG!
