generally, how long should we give are muscles to rest?

That really depends. I would tend to think 7 days...I usually work on one muscle group per week.

I think everyone is a little different. Rest and recuperation can depend a lot your diet and proably even genetics. Some people rest a muscle group about 48-72 hours and some rest 5+ days. I used to workout 3 days a week and rest 7 days between muscle groups (like Robert mentioned). I felt rested and I had decent workouts, but I stayed very consistant with the amount of weight I was using (no gains). Now, I do legs and chest twice a week with 3 days rest. I've increased my bench and squat dramatically, as well as put on about 10 pounds of mass in just a short amount of time. Once you "know" your muscles, you'll be able to tell if they're ready for a hardcore workout or not.

Great answer jbennet...I have went to a similare scheme, and also have put on more mass and made strength gains. I used to rest 7 days in between body parts, and as you say, kind of stayed stuck. I made some small gains due to my lifting diary, just to do something more, but nothing significant. Bodybuilding is not a one size fits all sport. As J says, learn your muscles.
