1 hour cardio + HIIT + weight training?

I used to do 45-60 minutes of cardio 5-7 days a week but I seemed to plateau on weight loss, so I added weight training hoping that the muscle would help me lose more fat.
Then I learned about HIIT and swapped the 60 mins for a hiit session. Now I do HIIT one day and weights the next but I miss the 60 minute cardio sessions.
I still want to get weight lifting in 3 x a week and HIIT 3 x a week as well. That said, my question is this:
Any way I can add that back in, or would 'long' cardio along with HIIT and weight training be overdoing it?
